ITC Hotels tie up with the Macallan for culinary collaboration
ITC Hotels, a leading luxury hospitality group in India, has signed an agreement with the Macallan, a leading Scottish single malt whisky, to co-create epicurean delights that pair food with the appropriate the Macallan whiskies.
According to a press statement, the collaboration brings together ITC’s Avartana, ranked 30th in Asia’s Best 50 restaurants, with the Macallan for creating a bespoke culinary experience, paired with whisky.
The statement adds that the unique pairing harmonises various drinks, notably the Macallan Double Cask (12-years-old), the Macallan Double Cask (15-years-old) and the Macallan Sherry Oak Cask (12-years-old) perfectly with their rich, sweet, balanced notes such as vanilla, toffee and cinnamon with the meticulously crafted seven-course menu that celebrates the rich tapestry of southern flavours.
The hotel group says that each dish is thoughtfully curated to underscore classic tastes and timeless ingredients. These include pan-seared seabass accompanied by mini appams, drumstick dumplings immersed in a moringa broth, uthukuli chicken paired with Malabar parotta and butter toffee. Guests can also savour asparagus and coconut stew, where turmeric-infused coconut broth embraces delicate idiyappam. The group adds that guests can conclude their culinary journey on a sweet note with fennel panna cotta adorned with angel hair caramel.
“We are excited to announce our creative collaboration with Avartana, aiming to curate an immersive and unforgettable experience for our discerning audience. The Macallan has consistently been synonymous with uncompromising quality and craftsmanship, and this collaboration serves as a testament to our steadfast commitment to delivering extraordinary moments,” says Madhu Rajigani, Brand Ambassador for The Macallan in India.
“ITC Hotels is known for showcasing the finest culinary traditions, guided by researching new concepts through its signature brand portfolio. Chef Nikhil Nagpal and team Avartana at ITC Hotels pick and choose the choicest of fresh ingredients and seasonal produce, reinventing haute cuisine fine dining into an evolved art,” says Manisha Bhasin, Corporate Executive Chef at ITC Hotels.
The statement adds that the collaboration is aligned with ITC Hotels’ ethos to featuring unique concepts in modernist iterations and progressive renditions while firmly being rooted to the traditional flavours and ingredients of peninsular India.
