Luxury and tradition come together at The Tamara, a resort in Coorg, a region in Karnataka. Pandi

curry or pork curry, a traditional Coorgi dish, is a speciality of area and of the Sous chef here.

Traditionally made from wild boar’s meat, country pork is now used to prepare the dish as hunting

of the rare wild boars has been banned. It is prepared on Coorgi festivals and is a part of the old

recipe books of the region’s ancestors and has been adapted in the contemporary times in a modish

way.
