Pumpkin soup recipe

Pumpkin soup is an easy to make starter with multiple health benefits. A nutritious broth, pumpkin soup is suitable for all age groups.
Half kilogram pumpkin
2 tablespoon clarified butter (ghee)
2 Garlic cloves
1/4th ginger
2 teaspoon Himalayan salt
2 cup water
Black pepper (as per taste)
Cumin powder (as per taste)
Coriander leaves

– Cut 1/4th peeled pumpkin into small pieces
– Boil the pieces gently for ten minutes and separate them from stock (water in which they were boiled)
– Make the pumpkin puree in a blender
– Heat 2 tablespoon of clarified butter in a saucepan
– Add finely chopped/ paste of garlic and ginger
– Add pumpkin puree as well as the stock
– Stir gently
– Add cumin powder, black pepper powder and Himalayan salt as per taste
– Add powdered spices like fennel, cardamom etc (optional)
– Stir and cook gently for 10-15 minutes
– Serve hot and enjoy your soup!
